Let ’s handle a few interesting items from this week .

Pickling/Fermenting

“ A friend who grow up on his family farm say his grandmother made sauerkraut the sometime way , in a wooden bbl . He said that as a little male child his job was to stomp the bbl down with his bare feet as his uncles shredded cabbage , his mom added saltiness and nanna tasted it to verify the engrossment was right-hand .

Half direction through one yr , he aver he heard his uncle require , “ Has this boy washed his feet ? ”

I make quart shock sauerkraut every Fall , and my wife makes Kimchi throughout the year . The bottom shelf of the fridge is dedicated to the quart shock of kraut . I have had good luck with the salt eviscerate enough brine out of the rip up cabbage , but you need to let it baby-sit out a while to sweat out the brine . ”

It always take incessantly to make the brine out of the cabbage when we did it , and it was never enough .

“ Really enjoyed this method . I detest have to smash up moolah for what feels like minute just to push enough liquidness out of it . I should have just trusted my inherent aptitude and used a salt water brine like this . BTW , ginger and cultivated carrot adds a unequalled flavor to the Boche as well . sample it some time if you have n’t but not too much . I just tear up one medium / small cultivated carrot and about a 2inch firearm of ginger . ”

Ginger sounds good to me !
